Jumbles 
A delectable, soft centred, golden crusted, lemony biscuit; wonderful with hot tea or coffee.

3/4oz butter
3/4oz caster sugar
1 small egg, beaten
1/2oz self-raising flour
2 teaspoon finely grated lemon rind
1 teaspoon vanilla 
1/2oz ground almonds
  Line a couple of baking trays with parchment and pre-heat the oven at 200°c.  
  Cream the butter with a wooden spoon until soft, but not oily, then add the sugar and continue beating until light and fluffy.  Beat in the egg and vanilla and add the sifted flour, lemon rind and almonds.  Form the mixture into sausage shape pieces about 4 inches long and 1/2 inch wide and then curve each into an 'S' shape.
  Place on the baking trays, and bake in the centre of the oven for about 12 minutes, or until risen and golden.  Cool for a few minutes, then dust with icing sugar.
